guest post | margaritaville

9.04.2013

my friend, julie, is good at getting me drunk. she also keeps me fed while she forces me to drink the best margarita(s) i've ever had.

so, i asked her to share her recipes for both.

and she did.

so here they are.

and you're welcome.

(thanks, garCAY!)

fresh margarita
(serves two)

the what:
1 freshly squeezed orange
2 freshly squeezed limes
2 ounces herrerdas silver tequila (or your personal fave, but, this isn't the time for shitty tequila.)
pink or black himalayan sea salt
dash or two of saint lucifer spices (ps. you should find a local retailer and buy this spice. it's amazing.)

the how:
shake all of the juices and tequila together. line the rim of the glass with the salt and spice mixture. add large ice cubes. pour juice into glass and add a spritz of selzer, like perrier or san pellegrino.

gulp. and repeat.
black bean salsa
(makes about six cups, so enough for a big group)

the what:
1 cup white corn
1 cup yellow corn
2 cups black beans
1 bunch cilantro, chopped
1 bunch mint, chopped
1 small red onion, chopped
1 bunch spring onions, light green and white parts only, chopped
1 yellow or orange bell pepper, chopped
2 cups tomatoes, chopped
3 limes, juiced
1 lemon, juiced
1 tbsp cumin
1 tbsp minced garlic
1 tbsp extra virgin olive oil
1 tsp saint lucifer spice
salt and pepper to taste
*1 chopped mango if it's in season

the how:
combine all of the ingredients and mix. serve with tortilla chips or as a healthy and fresh side dish for taco night.

*you can make this dish ahead of time and refrigerate for later, the next day even. you can also serve it immediately. however, julie and i both agree that it's better if it sits for an hour or two so that the flavors can really merry. also, we really like tostitos with a hint of lime with this. sure, they're like the doritos of the tortilla chip world. but they're damn good, especially when you pretend like you're five and lick all of the salt off first. and double dip. which is exactly what i did. hash tag no shame.

thanks, jules. loves.
